1 cup white flour = 1 cup unbleached flour
1 cup white flour = 1 cup Cornell mix
1 cup white flour = 3/4 cup coarse ground whole wheat flour
1 cup white flour = 7/8 cup whole wheat pastry flour
1 cup white flour = 3/4 - 1 cup fine ground general purpose whole wheat flour

in bread recipes: 1 cup flour = 3/4 cup whole wheat flour + 1 cup wheat germ

in pie crusts, cookies, cakes: 1 cup flour = 1/2 cup whole wheat pastry flour + 1/2 cup rice flour

in quick breads- waffles, pancakes, muffins: 1 cup flour = 1/2 cup unbleached + 1/2 cup whole wheat flour

or 3/4 cup unbleached + 1/4 cup corn, rice, or soy flour.
