Ingredients
- 1 clove garlic
- 1/4 cup onion, chopped
- 1 3 ounce can mushrooms, sliced
- 1 1/2 - 2 tablespoons butter
- 1 can corned beef hash, crumbled
- 1/3 cup sour cream
- 2 tablespoons water
- 2 tablespoons fresh parsley, minced
- 2 medium tomatoes, sliced 1/4' thick
- parmesan cheese, grated
Directions
Saute garlic, onion and mushrooms in butter until tender - not brown. Add hash, brown well. Combine sour cream, water and parsley. Stir in hash mixture. top with tomato slices. Cook covered over medium heat 5 minutes. Sprinkle with cheese.
