Portuguese Kale and Sausage Soup

	Ingredients
		
			
				- 1/2 pound sliced linguica/chorizo
 	
			
				- 4 medium potatoes, peeled and diced
 	
			
				- 6 cups chicken stock
 	
			
				- 1 diced onion
 	
			
				- 4 cloves crushed garlic
 	
			
				- 4-5 cups chopped kale
 	
			
				-   salt and pepper
 	
			
		
	Directions
	Combine the sausage with water to cover in a saucepan. Bring to a boil, and cook for 5 minutes. Drain off water and set aside. Slice. Combine the potatoes with water to cover in a saucepan and boil until tender. About 8 minutes. Drain and briefly mash potatoes wiht a potato masher. The texture should be uneven and lumpy ( I usually cook the diced potatoes in the chicken stock, so none of the vitamins is lost).. In a large saucepan, combine the chicken stock, onion and garlic and bring to a boil. Reduce the heat and stir in the potatoes, then the sausage and kale. Simmer for about 15 minutes, add salt and pepper if needed, and serve.
