Tbis is a super easy recipe for Italian-style potato salad. You can make it with whatever potatoes you like, but I don't recommend Idaho Russet - I recommend yellow or red potatoes.

Bring some nicely salted water to a boil.

Cube the potatoes, and boil them until they're just tender. If they're *slightly* on the mushy side that's ok; you just don't want them crunchy. Drain and put in a big bowl to cool.

Mince the green onions and chop the peppers

I used to use Good Seasons Italian dressing, but it now contains gluten; you can use whatever Italian dressing you like - I've mixed one up with some red wine vinegar, olive oil, salt, pepper, garlic powder, and herbs (oregano, thyme, basil, whatever).

Add the onions and peppers to the potatoes, and mix in the salad dressing.
