Ingredients

finely diced celery
tomato wedges
thinly sliced cucumber
green pepper rings
green or dried onion slices
diced or sliced radishes
avocado slices
cooked and cubed or sliced potatoes
feta cheese cubes
black Greek olives
beets
anchovies or sardines
oregano
variety of greens
Dressing:
2 parts olive oil to
1 part vinegar or lemon juice
salt
pepper

Directions

There is no hard and fast rule concerning ingredients. Sprinkle what ever assortment of salad ingredients you have picked with oregano and toss with the simple dressing just before serving. Zesty Italian Good Seasons made with olive oil works well.
