Baked Stuffed Fish

CommentThis was my intro to fish cookery thanks to George who bought me my first Joy.

Ingredients

Directions

Preheat oven to 325 degrees.
Stuff the fish. We used sea bass. It was excellent, especially since George was doing the cooking!
Bake about 40 minutes or until done.
Serve with a sauce of equal parts of butter and sauterne.
Serve lime wedges with the fish.

Stuffing for Fish:
Combine: 1 1/2 cups bread crumbs
2 tablespoons chopped onion
1/2 cup chopped parsley
1 or 2 beaten eggs
1/2 cup chopped celery
Season well with:
1/2 teaspoon salt
1/8 teaspoon paprika
1/2 teaspoon dried tarragon or dill sead
2 tablespoons capers
1/4 teaspoon nutmeg (optional)
Use enough milk, melted butter or soup stock to make a loose dressing.
