Refried Beans

	Ingredients
		
			
				- 1 pound (2 1/2 cups)  dried pinto beans
 	
			
				- 5 cups water
 	
			
				- 1-2  diced medium onions
 	
			
				- 1/2 -1 cup bacon drippings, lard, butter
 	
			
				-   salt
 	
			
		
	Directions
	Combine beans in a pan with water and onions. Bring to a boil, cover and remove from heat for 2 hours or soak beans overnight in cold water. Return to heat, bring to a boil and simmer slowly until beans are very tender, about 3 hours.(Or make it simple and use the pressure cooker) Mash beans with a potato masher, and add bacon drippings, butter, or lard. Mix well; continue cooking, stirring frequently until beans are thickened and fat is absorbed, Salt to taste, Serve or reheat. Makes 6-8 side dish servings, or 5-6 cups.
