Mix slowly and not too much; refrigerate the dough; turn the tray halfway through baking; cool and eat. 1. Mix the dry ingredients:mix together all the flours and then add the other dry ingredients.
2. Cream the butter and sugars: Put softened butter into mixer and beat just a bit. Add the two sugars and mix until just combined. Add the eggs and vanilla. Mix until combined.
3. Make the dough: add the dry ingredients to the wet ingredients. Add 1/4 cup at a time, then mix. Repeat until all the dry ingredients are added. Add the oats and mix together until combined.
4. Refrigerate the dough. Chill for at least two hours.
5. Preheat the oven. Put cookies onto parchment paper covered cookie sheet. Leave a lot of room between the cookies because they will spread a bit. Bake 9 minutes. turn the tray around. Bake another 9 minutes. Edges should be crisp and centers a bit squishy.
6. Let the cookies sit for at least 30 minutes before serving them. (Ha)
