Ingredients
- 1 garlic cloves, peeled and quartered
- 1 med. onion, sliced or chopped
- 1-2 tablespoons oil or butter
- 1 cup sliced mushrooms
- 1 eggplant, sliced & pressed
- 1 1/2 cups mozzarella, grated
- 1 1/2 cups spaghetti sauce
- 2-3 tablespoons wheat germ
- 2-3 tablespoons parmesan cheese
Directions
Saute garlic and onions in oil until the onions are transparent. Add mushrooms, and cook until they are done - remove from pan. Fry eggplant adding more oil as needed. Drain on paper towels. Eggplant is translucent when cooked Make layers starting with mushrooms and spaghetti sauce, then eggplant, then cheese. Continue until it's all gone - end with sauce. Top with wheat germ and parmesan cheese. Bake at 350 degrees for 30 minutes.
