Ingredients
- 1/2 cup butter
- 4 egg yolks, well-beaten
- 2 tablespoons lemon juice
- dash cayenne pepper
- 1/4 teaspoon salt

- Bearnaise:
- shallots, chopped
- tarragon vinegar
- grated horseradish
Directions
Melt the butter Add the egg yolks Stir thoroughly Drip the lemon juice in and then stir over boiling water Add the salt and cayenne pepper To make Bearnaise, make the Hollandaise and add the rest of the ingredients to it.
