Ingredients
- 1 tablespoon oil
- 1 teaspoon grated fresh gingerroot
- 1 clove minced garlic
- 1 pound boneless chicken meat
- to taste salt
- to taste pepper
- 1/4 cup chicken broth
- 1 tablespoon lemon juice
- 1/4 cup mayonnaise
- 1/4 cup yogurt
- 1 mango, peeled and diced
- 1/2 cup diced celery
- 1/4 cup red bell pepper
- thinly sliced green onions for garnish
Directions
In a skillet, heat the oil. Add ginger, chicken, salt, pepper and saute 3-4 minutes, or until chicken is cooked. Remove chicken to salad bowl. Add chicken broth and lemon juice to mixture remaining in skillet. Boil to reduce pan liquid to about 1 tablespoon, scraping brown bits from skillet. Let cool. In a bowl, combine reduced pan liquid, mayonnaise and yogurt. Toss with chicken. Add mango, celery and red pepper, mix well. Refrigerate several hours before serving. Garnish with green onions. It is best to make this salad several hours before serving to allow flavors to blend.
