Shrimp in Spiced Sauce

Ingredients
- 1 cup yogurt
- 1 tablespoon minced fresh ginger
- 2 teaspoons oil
- 1 small onion, chopped
- 1 tablespoon minced garlic
- 1/2-1 teaspoon red pepper powder
- 1 tablespoon garam masala
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon salt
- 1 pound medium shrimp, peeled, deveined
- 2 tablespoons tomato paste
- 2 tablespoons chopped fresh cilantro
Directions
Heat oil in a non-stick skillet over moderate heat. Add the onion, ginger and garlic. Stir until softened. Add the red pepper, garam masala, coriander, turmeric and salt to the pan and stir to mix. Cook over moderate heat for 1 to 2 minutes to blend the spices. Add the shrimp and tomato paste. Cook, stirring, for 2 minutes. Add the chopped coriander leaves and yogurt and cook until the shrimp are pink and opaque and the sauce is heated through. Note: if you use chopped shrimp, just warm them up. The original recipe had 1/2 cup cottage cheese and 1/2 cup skim milk. I used all soy yogurt instead and it tasted wonderful and there was no need to use the food processor to make the cottage cheese smooth.
