4 eggs if not dairy-free use: 2 eggs and 2/3 cup cottage cheese
2 tablespoons butter or oil
1 teaspoon vanilla
1 can pureed pumpkin OR
1 cup grated zucchini etc. whatever vegie you like
1 cup dried fruit (chopped apricots, raisins, etc.)
1 cup chocolate chips
Directions
Mix up the dry ingredients. Mix up the wet ingredients, and if you are using cottage cheese mix until the curds disappear. Add vegetable:pumpkin or zucchini recommended, but whatever you like. Add dried fruit, and chocolate chips.
Bake in muffin tins - grease well or use parchment muffin papers - don't use the cheap papers. They don't work well. Bake at 350 for about 30 minutes
