Ingredients
- 16 crushed graham crackers
- 1/4 cup melted butter

- 3 3 ounce packages softened cream cheese
- 1/2 cup sugar
- 2 eggs, lightly beaten
- 1 teaspoon vanilla

- 1 cup sour cream
- 1 tablespoon sugar
- 1 teaspoon vanilla
Directions
Serves 6-8. Mix graham crackers and butter or use any standard graham cracker crust. Put in 9 inch pie tin. Mix filling: Blend the cheese and sugar in mixing bowl and add and blend in the eggs , slightly beaten and the vanilla. Pour into crust and bake at 325 for 25 minutes. Cool pie slightly and pour on topping of sour cream mixed with the vanilla and sugar. Bake again for 8 minutes at 325. This recipe is supposed to serve 8 but four could easily polish it off.
It may need to cool in the refrigerator for a short time to firm up.
