Mix until very smooth, if you need, add more milk . If you want to add food coloring, go light on the milk at first. Options: lemon - substiute lemon juice for milk, omit the vanilla mocha - add 1/2 cup cocoa ( I added about 1/4 cup - it was slightly light on the chocolate flavor but ok) substitute 1/3 coffee for milk and reduce vanilla a bit chocolate - increase butter to 1/2 cup ( I didn't because I was using Penzey's cocoa - 24% butterfat) this seems like a lot of butter added melt, cool 3 squares, unsweetened chocolate add with 2 egg yolks (this seems a bit much) chocolate - Liat increases butter and adds cocoa and add milk slowly. Orange- chocolate: add half orange juice and half milk or soy milk and 1/4 cup high fat cocoa
