Breading: grind a gluten=free waffle in blender and use as bread crumbs
1 cup crumbs = 1 cup wheat germ + 1 egg
1 cup crumbs = 1/2 cup wheat germ + 1/2 cup soy grits + 1 egg
1 cup bread crumbs = substitute 1/4 cup each of these possible combinations: cornmeal, soy grits, wheat germ, (I need to think of some others, This is too restrictive.)
