Ingredients
- 1 chicken fryer, cut up
- flour, seasoned
- 1/4 cup butter
- 1/4 cup onions, finely chopped
- 1/4 cup green pepper,finely chopped
- 1 clove garlic, minced
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon thyme
- 2 cups tomatoes, stewed or canned
- 3 tablespoons currants
- rice, cooked
Directions
Preheat oven to 350 degrees. Cut fryer into pieces and coat with the seasoned flour. Brown the chicken in butter. Remove, drain and place in a casserole. Simmer gently in the pan drippings until golden: the onions, pepper, clove garlic, and spices. Add the tomatoes and simmer until the pan is deglazed. Pour this sauce over the chicken and bake uncovered about 40 minutes or until the chicken is tender. During the last 5 minutes of cooking add the currants. Serve with boiled rice and garnish with currants.
