Ingredients
- TOPPING
- 1/2 cup honey
- 1/4 cup butter
- 4-5 cooking apples
- maraschino cherries
- CAKE BATTER
- 1 1/2 cups sifted all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 dash ginger
- 1/2 cup soft butter
- 3/4 cup honey
- 1 egg
- 1/2 cup milk
- SAUCE
- 1/2 cup honey
- 1/2 cup butter
Directions
Topping directions: Put honey and butter in a heavy 10" skillet (one that can go in the oven). Melt butter, Core unpared apples and slice about 1/2" thick. Arrange enough of these slices in honey mixture to fit comfortable. Simmer gently, turning once, until apples are partly cooked. Put a cherry in the center of each apple ring. Set aside for a moment. Cake batter directions: Sift flour with baking powder, baking soda, cinnamon, nutmeg and ginger. Set aside. Beat butter and honey together vigorously. Add the egg and beat thoroughly. Stir in flour mixture and milk alternately. Pour over apple rings and bake in 350 degree oven for 40 - 45" or until a toothpick inserted in center comes out dry. Turn upsidedown on a large platter and serve hot or cold with the sauce on the side. Sauce directions: Combine the honey with butter and heat until butter has melted. Do not boil.
