Ingredients
- 1/3 cup stone ground cornmeal
- 1/3 cup sugar
- 1/3 cup soy flour
- 1 cup whole wheat flour
- 3/4 teaspoon salt
- 1 teaspoon baking soda
- 1 large egg, lightly beaten
- 1 cup yogurt
- 1/3 cup melted butter
Directions
1. Bowl: Combine cornmeal, sugar, soy flour, ww flour, salt and baking soda. 2. Mix egg and yogurt together lightly and stir into dry ingredients. Stir in the butter. 3. Fill muffin tins 2/3 full. Bake 25 minutes.
