Lightly pound chicken breasts flat on plastic cutting board. Sprinkle with almonds, apricots and seasonings. Roll each chicken breast into a tight roll; place seam side down in a baking dish. Brush with butter. Bake at 367 degrees for about 30 minutes. These can be made with chicken tenders for appetizers. If prepared as appetizers, chop the apricots and nuts into smaller pieces. I found it necessary to cover the chicken breasts with foil when cooking to keep them from drying out.
