Ginger Pork Chops with Prunes

Ingredients
- 4 1/2" thick pork chops
- 4 medium chopped onions
- 1/2 teaspoon ground ginger
- 1 teaspoon brown sugar
- 1 clove minced garlic
- 3/4 cup beef stock
- 1 stick cinnamon
- 1 tablespoon soy sauce
- 4 teaspoons worchestershire sauce
- 1 tablespoon flour
- 12 large, pitted pitted prunes
- 1/4 cup cold water
- lemon wedges
Directions
Score the edges of the pork chops. In a frying pan that has a tight cover, lightly coat the bottom with oil, and brown the chops on both sides. Add the onion and saute until lightly browned. Then add the ginger, brown sugar, garlic, broth, cinnamon, soy and Worchestershire. Stir. Set the prunes on top of chops, cover and simmer very slowly for about 35 to 40 minutes, or until tender. Remove the meat and prunes to a warm serving plate. Stir the flour and water paste into gravy and bring to boiling: cook, stirring until thickened. Serve the gravy in a bowl. Garnish meat with lemon wedges. Makes 4 servings.
