This salad is very good, but it is only really good when it is fresh.
Ingredients
2 1/4 cups cooked rice
1/2 bunch sliced scallions
1 bunch, chopped into medium pieces kale
1/2 cup tamari almonds, or any smoked almonds
1/4 bunch (a few stalks) celery
2 2/3 tablespoons ume plum vinegar
1 tablespoon canola oil
1/4 large red onion
1/2 inch grated ginger
4-5 sliced mushrooms
Directions
Saute the kale, mushroons, ginger, and onion in the canola oil until the kale is just cooked (turns color). While these ingredients are sauteing, mix the rest of the ingredients. Add the hot kale to the rice mixture. Eat immediately. This salad must be eaten fresh for best flavor.
