Ingredients
1 cup macadamia nuts, roasted and salted
1/2 cup unsweetened shredded coconut
4 salmon fillets
2 tablespoons coconut oil
Sauce:
8 tablespoons unsalted butter or ghee
1 thinly sliced shallot
1/4 cup lime juice
1 teaspoon salt
1/2 cup cream or coconut cream
Directions
Preheat oven to 375.
In a food processor - finely chop the nuts with the shredded coconut. Brush the salmon with melted coconut oil and coat the salmon with the nut mixture.
Roast for 20 minutes; if the nuts start to brown too much, cover loosely with foil.
While the salmon cooks, make the sauce. In a saucepan over medium heat, melt the butter or ghee, and cook the shallot about 2 minutes, or until soft. Add the lime juice and salt, and stir until combined. Add the cream and cook about 5 minutes, until slightly thickened. Serve the salmon topped with the sauce.
