Ingredients
- 1 pound raw shrimp
- 1 teaspoon dry sherry
- 1 teaspoon corn starch
- 1/2 teaspoon salt
- 1 tablespoon scallion, minced
- 1 tablespoon ginger, finely chopped
- 1/4 cup fermented black beans
- 1 cup oil
- 1 clove garlic
Directions
Rinse and shell shrimp - split in half down back and remove black vein. Mix shrimp with sherry, corn starch, salt. and msg. Mince black beans and mix with 1 tablespoon water. Heat oil in hot skillet over high heat. Stir in mixed shrimpls and turn constantly for about 1 minute until shrimps are pink. Drain in a colander or strainer over a bowl. Put 2 tablespoons oil from the bowl in same skillet over medium heat. Add scallion, ginger root and black beans. After several stirrings, mix in cooked shrimps and serve immediately. If you like garlic, add a clove crushed, with scallion and ginger root in cooking.
