Ingredients
- 2 medium potatoes
- 2 small onions
- 2 cups water
- 1 scallion
- 1 cup sour cream
- 1 teaspoon salt
Directions
Peel the potatoes. Dice the potatoes into small 1/2 inch cubes. Peel and dice the onions. Put the diced potatoes and onions in a medium-sized saucepan. Pour enough water into the saucepan to cover ingredients. Turn on a high flame, and bring it to a boil. Then reduce the heat to medium and boil for 4 minutes. Meanwhile, dice the scallion into very small, thin pieces. Pour the potato and onion mixture into a blender (or potato masher) and blend or mash until creamy. Pour it back into the saucepan and add the sour cream and salt. Add the diced scallion and heat over medium flame until the soup bubbles. Serve. Add salt and pepper to taste. Probably doesn't need the salt and pepper.
