Bulgur with Sundried Tomatoes

Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 tablespoons finely chopped sundried tomatoes
- 1 cup bulgur
- 2 cups chicken stock, veg. stock or water
- salt, pepper, parsley, chopped garlic
Directions
Saute onion, chopped garlic, and sundried tomatoes in oil for several minutes.
Add the bulgur and saute it for a few minutes.
Add the stock, cover and simmer for about 30 minutes, until the water is absorbed and the bulgur is cooked.
Add the seasonings - parsley if you wish.
If you want to add parsley and all you have is dried, add it with the stock.
