Ingredients
- 4 thick loin pork chops
- 1 cup uncooked rice
- 2 cups canned sour cherries (frozen work)
- 1 tablespoon sugar
- grated peel of 1/2 lemon
- pinch cinnamon
- salt and pepper
Directions
Brown pork chops on both sides in a little oil. Place rice in bottom of casserole, pour cherries and their juice over it, plus 2/3 cup water. Sprinkle sugar, lemon peel, and cinnamon over this, arrange pork chops on top, salt and pepper, and cover. Bake in 350 degree oven 1 hour or until liquid is absorbed. Lift chops and fluff rice with a fork. Replace and serve.
Serves 4.
Time 1 1/4 hours.
