Ingredients
- 4 small sliced onions
- 1 clove garlic sliced
- 2 tablespoons olive oil
- 1 6 ounce can tomato paste
- 2 crumbled bay leaves
- 1 teaspoon cinnamon
- salt and pepper
- 2 pounds fresh or frozen fish fillets
Directions
Saute onions and garlic in oil until soft. Add tomato paste, bay leaves, cinnamon, salt, pepper and 1 cup water. Simmer until you have a thick, smooth, and fragrant sauce, about 20 to 25 minutes. Arrange the fillets in a shallow casserole. Pour sauce over them. Bake in 350 degree oven 20 minutes or until the fish is white and flaky.
Serves 4
Serve with: hashed browns, lettuce with lemon dressing ( 3 parts heavy cream, 1 part lemon juice, dash of grated lemon peel, pinch of salt); muffins.
