Excellent breakfast protein and fiber.
Ingredients
1 cup flaxseeds, ground
1/2 cup walnuts, ground
3/4 cup protein powder
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
4 tsp oil (or butter)
2 each eggs
2 tsp vanilla
2/3 cup ricotta (or cottage) cheese
1 zest grated from an orange
2/3 cup brown sugar
3/4 cup dried currants
3/4 cup shredded zucchini (or canned pumpkin)
Directions
Line muffin tin with paper muffin cups.
Mix all ingredients and bake at 350 for 20 to 25 minutes.
