Ingredients
- 3 cups summer squash
- 1/4 cup yogurt
- 1 tablespoon butter
- 1 tablespoon grated cheese
- 1/2 teaspoon salt
- 1/8 teaspoon paprika
- 1 beaten egg yolk
- 1 tablespoon chives/green onion
- bread crumbs
- grated cheese
- dots of butter
Directions
Serves 4 Cut the squash in small pieces and simmer until tender. Drain Combine the yogurt, butter, grated cheese, salt, paprika Stir over low heat until the cheese melts Remove from the heat and add egg yolk and chives or green onion Add the squash Put the mixture in a baking dish Cover with bread crumbs, grated cheese and dots of butter. Brown in a 375 degree oven.
