Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup butter
- 2 tablespoons sugar
- 1/2 teaspoon cinnamon
- 3 8. oz. packages cream cheese at room temp
- 3/4 cup sugar
- 3 large eggs
- 1 8. oz. package semisweet chocolate chips
- 1 cup sour cream
- 1 teaspoon instant espresso dissolved in something (???)
- 1/2 cup hot water
- 1/4 cup coffee liqueur
- 2 teaspoons vanilla
- shaved chocolate (garnish)
Directions
Serves 12-15. Butter sides of 8" springform pan. Combine first 4 ingredients and press evenly onto bottom of pan. Preheat oven to 350 degrees. Beat cream cheese until smooth. Add sugar gradually, Blend well. Add eggs one at a time - beat at low speed until smooth. Melt chocolate with whipping cream over boiling water, stirring until smooth. I must have left out the amount of whipping cream needed. What to do! A dilemma. Add to cheese mixture blending well. Mix in sour cream, then cooled coffee and liquer. Add vanilla and blend well. Turn into springform pan and bake 45 minutes or until sides are slightly puffed. (center slightly soft). Cool on rack. Refrigerate 12 hours. Remove sides, garnish with shaved chocolate.
