Ingredients
- 3 pounds chicken wings, necks, backs
- 1 bay leaf
- 1/2 teaspoon thyme
- 12 peppercorns
- 1 ribs of celery with leaves
- 1 large onion
- 2 in onion cloves
- 1 chopped carrot
- 6 sprigs parsley
- 10 cups water
- 1 tablespoon salt

Directions
Use at least a 4 quart kettle Simmer 2 hours uncovered Skim scum Strain with cheesecloth in sieve Can be reduced over high heat (add more salt only at the end)
