Ingredients
- 1/2 cup water
- 2 tablespoons yeast
- 1 tablespoon molasses
- 1 cup buttermilk
- 1 cup water
- 3 tablespoons butter
- 1/4 cup honey
- 2 teaspoons salt
- 1 cup cracked wheat
- 4 cups whole wheat flour
- 1/4 teaspoon baking soda
- 1+ cups unbleached flour
Directions
Combine the water, yeast and molasses in a large bowl.
Heat in a saucepan until warm: buttermilk, water, butter, honey, salt and cracked wheat.
Add to yeast mixture.
Add the flour and baking soda.
Cover and rise until double.
Stir down the dough: add 1 cup unbleached flour. Knead, using some of the remaining unbleached flour, for 5 minutes.
Place in greased bowl and cover and let rise until doubled in bulk.
Grease 2 9x5x3 inch pans. Punch down dough and shape into 2 loaves and put in to pans.
Cover and let rise until almost double.
Put in an unheated oven and turn to 375 degrees.
Bake around 50-55 minutes.
Cool on rack.
