this is great and can be made with another flour besides wheat - besan etc.
Ingredients
1/2 cup cornmeal
1/2 cup unbleached white flour
1/2 teaspoon salt
1/2 teaspoon pepper
4 1/2" thick large green tomatoes
grated parmesan or romano
Directions
Preheat the oven to 400 degrees. Combine the cornmeal, flour, salt and pepper in a flat dish, set aside. Lightly coat a baking sheet with nonstick cooking spray. Dip each tomato slice in cool water, dredge in the cornmeal-flour mixture, and place in a single layer on the baking sheet. Bake 15 minutes, turn the slices over, sprinkle with the Parmesan, and bake 5 minutes more. Serve at once. Per serving: 72 calories; 2 grams protein; 0.1 gram fat; 15 grams carbohydrate; 0 mg chol.; 141 mg. sodium; 2 grams fiber.
