Ingredients
- 1 pound lasagna noodles
- 1 package frozen chopped spinach
- 1 cup parmesan cheese, grated
- 11/3 cups ricotta cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper, divided
- 1/4 teaspoon nutmeg
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 tablespoons oil
- 1 15 oz. can tomato sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
Directions
Cook noodles, drain, Mix spinach, 3/4 cup parmesan , ricotta, salt, 1/4 teasp pepper, nutmeg. Spread mixture along length of each noodle. Roll each and stand on end in casserole dish, greased. Saute garlic, onion in oil until limp. Add tomato sauce, sugar, salt, basil, oregano, 1/4 teasp. pepper. Simmer 5 minutes uncovered. Pour over noodles, cover and refrigerate if made ahead. Bake at 350 degrees for 30 minutes (50 - 60 if cold). Remove from oven and sprinkle with 1/4 cup parmesan cheese.
