Ingredients
- 4 pound chicken, cut up
- 2-3 tablespoons flour
- 1/4 cup olive oil
- 2 tablespoons shallots
- 1 clove minced garlic
- 1/4 cup tomato paste
- 1/2 cup dry white wine
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 3/4 cup chicken stock
- 1/2 bay leaf
- 1/8 teaspoon thyme
- 1/2 teaspoon basil
- 1/8 teaspoon majoram
- 1/2-1 cup mushrooms, sliced
Directions
Cut chicken into pieces , dredge with flour and saute until golden brown in the olive oil with the shallots and garlic, Add all the rest of the ingredients and simmer covered for 1 hour or until tender. Serve with boiled pasta or sauteed tiny new potatoes or rice.
