Ingredients
- 1 banana, very ripe
- 1/2 cup buttermilk
- 2 large eggs
- 1 1/4 cup milk
- 2 tablespoons sugar
- 1/4 cup melted butter or oil
- 1 teaspoon zest of lemon
- 1/2 teaspoon nutmeg
- 1 1/3 cups whole wheat flour
- 1/3 cup cornmeal
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup blueberries
Directions
In a large mixing bowl, mash the banana and buttermilk together with a potato masher. Whisk in the eggs, followed by the milk, sugar, butter or oil, lemon zest, and nutmeg. In a separate, larger bowl, toss together the remaining ingredients - except the blueberries - until mixed. Make a well in the dry ingredients, them pour in the liquids and mix gently with a wooden spoon or whisk. Do not beat., While there are still streaks of dry, fold the blueberries into the batter. Cook on a hot, greased griddle, using about 1/3 cup batter per pancake, Only flip them once, when the outer edge looks dryish and a few air holes appear on the surface. Makes about 15 pancakes.
