Yummy..you can't even tell it doesn't have noodles
Ingredients
1 pound Italian sausage, spicy
2 oz fresh basil, chopped fine
1 can tomatoes (~1 lb)
1 6 oz can tomato paste
3 cups cottage cheese
1/2 cup grated parmesan
2 cans artichoke hearts (not marinated)
2 eggs
1 tablespoon dried parsley
1 tablespoon dried oregano
1 pound mozzerella
2 large bunches fresh spinach (chopped)
Directions
1. Cook up the sausage in a pan. Add tomato products and basil, let simmer to remove juices. 2. Chop spinach. Place in salad spinner. Cover wtih boiling water and let sit a moment. Drain and spin dry. 3. Combine cottage cheese, eggs, parmesan, parsley, oregano in a bowl. 4. Slice mozzerella and artichoke hearts. 5. Butter bottom of 9x13 pan. 6. Layer artichoke hearts on bottom of pan. 7. Layer 1/2 of cottage cheese mixture on top of artichoke hearts. 8. Layer 1/2 of mozzerella on top of cottage cheese 9. Layer 1/2 of meat sauce on top of cottage mozzerella 10. Layer spinach on top of meat sauce. 11. Layer remaining cottage cheese on the spinach. 12. Layer remaining mozzerella on top of cottage cheese. 13. Layer remaining meat sauce on top of mozzerella.
Bake at 375 for 1/2 an hour. The longer you let it sit afterward before eating the better.
Note: make sure you get as much liquid out of all the ingredients as possible, so it doesn't end up being too runny.
