Ingredients
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1/2 lemon, juiced
- 4 heaping teaspoons sugar
- 5 bacon slices
- 1 pound spinach, cold
- 1 red onion, sliced paper thing
Directions
Assemble the dressing: olive oil, vinegar, lemon, sugar. Fry the bacon, set aside, deep fat hot. Just before serving toss 1 pound cold spinach with one onion sliced paper thin. Add dressing and toss. Finally, add crumbled bacon and its hot fat and toss. Spinach must be cold, fat hot and assembled at the last minute.
